Your piece was very comforting to me on a personal level. For ethical issues, I stopped buying meat a long time ago. I still enjoy salmon & tuna on a regular along with a fair amount of other types of seafood. But mostly - I do just what you suggest. I eat the rainbow. And I drink water - loads & loads of water. And oatmeal - I always have oatmeal around for a quick meal with some berries & coconut milk or for a snack. A lovely way to add nuts to a diet is to use them in a salad instead of croutons. It give the salad a healthy crunch factor.
