I've had 2 thoughts that might be of use to you. Per my research - fish is ok for kidney patients. There's a lot of fish out there & they can be made any number of ways. I'm a pescatarian - I eat a lot of fish. All different sorts of fish. And in the age of Zoom - you don't have to be confined to a 'local' support center to find caregiver support for dialysis patients. I particularly liked the one offered by the NKF. I found when my daughter was listed for her liver transplant - the most reassuring thing that happened to us was meeting another family - another child who was on the other side of what we were facing. It's worth the effort to connect with someone who has been there/done that. Well worth it.
